With The Double Seven in New York City, I had the opportunity to oversee the project from the pre-development phase all the way through the build-out completion.  The Double Seven is a highly anticipated, high-end cocktail lounge in the Meatpacking District.

This role required me to work alongside the ownership group from the business development process, including pro forma and  P&L development, Cost to Complete documentation, fine-tuning sales projections, etc.  This included, on a daily basis, overseeing all value-engineering needs, from design to build-out to opening payroll, and, ensuring the project moved forward to meet budgetary and timeline needs.

During the concept development phase, I worked directly with the architect, Rick Kreshtool, and the designer, Dodd Mitchell Design (Roosevelt Hotel Hollywood, Bond Street Beverly Hills, Thompson Hotel Hollywood) & Gulla Jonsdittor (Hollywood Roosevelt Hotel, Kodak Theater LA, Thompson Hotel Lower Eastside NYC) to revise any design elements required to meet the operator’s service needs. Once all design aspects were finalized, I supervised the bid-leveling process, followed by FF&E sourcing and fabrication.

For this project, I was given free reign over the bar & kitchen equipment design process. This included the final equipment selection, layout & overall floor plans.  As well as all related bid-leveling & installation requirements as they pertain to associated city/state/national code requirements.

In addition to the build-out responsibilities, I oversaw the staffing matrix development and management-level hiring process.

This was also our group’s third project working directly with Sasha Petraske (Milk & HoneyLittle Branch, Dutch Kills), the world-renowned mixologist, to develop a beverage program unique to The Double Seven.
